AROMA & FLAVOR: Woody with a toasty apple white wine aroma, sharp as it hits the palate and then balanced with the silky yeast, boozy notes of fresh whiskey barrels. Short and clean on the finish.
APPLE VARIETIES: 100+ varieties of desert and crab apples harvested locally from the olympic peninsula. Gravenstein, Wolf River, Chehalis, Green Sleeve, Northern Spy, Cox Pippin, Summer Red, Winter Banana, Cortland, Melrose, Jona Gold.
CIDERMAKER NOTES: A delightful derivation of the Finnriver Classic Farmstead Cider. This edition spent 2 months in fresh whiskey barrels for a quick extraction. The hazy yeast lends body to the experience while balancing the sparky apples with the heady barrel profile.
SERVING SUGGESTIONS: Serve with the Garden Bounty. Grilled Salmon, enormous salads, sausages, Chanterelle quiche, and a nice low tide beach walk.
